The Best Organic Pesto
Ingredients
The pesto:
- 2 cups fresh basil leaves, packed
- 1/4 cup shredded Parmesan
- 1/2 cup olive oil
- 3 tbsp raw walnuts or pine nuts
- 3 cloves of garlic, minced

Yields: 1 Cup
Directions
- Place all ingredients in food processor and blend until well blended.
Notes
Eat Pesto on:
- Pasta
- Spaghetti Squash
- Scrambled eggs
- Sandwiches
- Pizza/flatbread
- Mix with butter for pesto butter
- Mix with mayo for sandwich spread
- Spread pesto butter on grilled corn or roasted sweet potatoes
- Toss pesto with green beans, potatoes, white beans, peas, or tuna
- Add to chicken salad
- Add to hummus
- Spread on Salmon when it comes off the grill
Pesto Freezes Well! When thawing–never heat it just let it come to room temperature

- To make straining easier I use a mesh strainer over a pitcher-style 4-cup measuring cup. This makes transferring the stock to the canning jars easier. I do one jar at a time, cleaning out the strainer as needed. the fat will rise tot he top of the jars in the fridge which can be included in whatever you are making or scraped off if your body is not ready for all the fat. Discard the bones and vegetables. Meat still on the bones can be eaten or reserved for soups.
- I love to drink the broth warm with a little sea salt added with meals or use it cook rice or vegetables. I also use it anytime a recipe calls for stock or broth. So delicious healing to your gut!
