The Hot Cereal Recipe
Ingredients
The Cereal:
- 2 cups toasted buckwheat (kasha)
- 1 tsp. sea salt
- 1/4 tsp nutmeg
- 1 Tbsp cinnamon
- 3 tsp vanilla extract
- ~5 drops Stevia
- 1 carton rice milk unsweetened
- 1 can coconut milk
Prep Time: 5 Minutes
Cook Time: 45 Minutes
Total Time: 50 Minutes
Yields: 4 Servings
Directions
- The evening before, put cereal grains in a glass mixing bowl (on the countertop – room temperature), add rice milk, stir well, and leave to soak overnight.
- In the morning, put the whole mixture in a large pot and add coconut milk and then rice milk.
- Cook on medium heat with a lid on for at least 45 minutes stirring every ten minutes or so.
- Thin as needed with more rice milk to keep a creamy (not glumpy or non-pourable) consistency.
- Flavor and texture will improve over days of storage, so make enough to last the week!

- To make straining easier I use a mesh strainer over a pitcher-style 4-cup measuring cup. This makes transferring the stock to the canning jars easier. I do one jar at a time, cleaning out the strainer as needed. the fat will rise tot he top of the jars in the fridge which can be included in whatever you are making or scraped off if your body is not ready for all the fat. Discard the bones and vegetables. Meat still on the bones can be eaten or reserved for soups.
- I love to drink the broth warm with a little sea salt added with meals or use it cook rice or vegetables. I also use it anytime a recipe calls for stock or broth. So delicious healing to your gut!
