Slow Cooked Apples

The Apples:

  • 3 pounds firm cooking/baking apples (granny smith, carlsons)
  • 3/4 teaspoon ground cinnamon
  • 1/2 cup raisins
  • 1/8 cup brown sugar
  • 1/2 tsp lemon juice
  • 1/2 cup walnuts

Cook Time: 1 hr 30 Minutes

Total Time: 1 hr 45 Minutes

Yields: 6-8 Servings

Directions

  1. Peel the apples, take out the seeds and slice 1/2 inch thick (or quartered if you would like)
  2. Place the apples in a 4-quart or larger slow cooker
  3. Add sugar, cinnamon, and lemon juice and stir to coat well
  4. Cover and cook until the apples are very tender and almost translucent, 1-1 1/2 hours on high or 3 hours on low. 
  5. Top with dried fruit and nuts

Great over oatmeal!

  1. To make straining easier I use a mesh strainer over a pitcher-style 4-cup measuring cup. This makes transferring the stock to the canning jars easier. I do one jar at a time, cleaning out the strainer as needed. the fat will rise tot he top of the jars in the fridge which can be included in whatever you are making or scraped off if your body is not ready for all the fat. Discard the bones and vegetables. Meat still on the bones can be eaten or reserved for soups.
  2. I love to drink the broth warm with a little sea salt added with meals or use it cook rice or vegetables. I also use it anytime a recipe calls for stock or broth. So delicious healing to your gut!
