Shortbread Cookies

The Cookies:

  • 2/3 cup coconut flour
  • 8 Tbsp butter
  • 1/4 cup honey
  • 1/8 tsp sea salt
  • Jam (optional)

Prep Time: 15 Minutes

Cook Time: 10 Minutes

Total Time: 25 Minutes

Yields: 12 Cookies

Directions

  1. Cut butter into flour and combine.
  2. Add honey and salt and mix thoroughly.
  3. If too dry to form a ball, add a few drops of water until the dough comes together.
  4. Form into small balls, press down (they will not rise). 
  5. Either criss-cross the top with a fork or press a thumbprint in the center and add jam. 
  6. Bake for 8-10 minutes until golden.
