Pumpkin Chia Pudding

The Pudding:

  • 3/4 cup whole chia seeds 
  • 1 can whole coconut milk, full fat 
  • 1 can organic pumpkin 
  • ¾ cup cool water 
  • 1 Tbsp vanilla extract 
  • 1 tsp ground cinnamon 
  • 1/4 tsp ground nutmeg 
  • 1 Tbsp honey 
  • ½ tsp sea salt

Prep Time: 10 Minutes

Set Time: 4 Hours

Total Time:4 Hours 10 Minutes

Yields: 1 Pudding Cup

Directions

  1. Put all ingredients except chia seeds in large pitcher or mixing bowl and whisk aggressively and thoroughly to blend well (this is key to breaking up all of the clumps of coconut oil).
  2. Add chia seeds and immediately begin whisking again to blend well until seeds are thoroughly distributed (~30 seconds).
  3. Cover and refrigerator at least four hours.
  4. We topped this with slivered almonds and another shake of cinnamon. The flavor is best at room temperature.
