Pecan Pie Fudge
Ingredients
The Fudge:
- 2-3 cups pecans, resulting in 2/3 cup pecan butter (or purchased pecan butter)
- 1/3 cup honey
- 1/2 tsp salt
Prep Time: 15 Minutes
Cook Time: 5 Minutes
Total Time: 20 Minutes
Yields: 10-12 Servings
Directions
- In food processor, process nuts into nut butter until smooth – about 5 minutes (add a little oil if needed).
- Combine pecan butter (use 2/3 cup), honey, and salt and bring to a simmer over medium heat.
- Allow to boil for 3 minutes, stirring often, until it pulls away from the sides of the pan.
- Spread on parchment paper and press pecans into the top.
- Chill in refrigerator until ready to serve.

- To make straining easier I use a mesh strainer over a pitcher-style 4-cup measuring cup. This makes transferring the stock to the canning jars easier. I do one jar at a time, cleaning out the strainer as needed. the fat will rise tot he top of the jars in the fridge which can be included in whatever you are making or scraped off if your body is not ready for all the fat. Discard the bones and vegetables. Meat still on the bones can be eaten or reserved for soups.
- I love to drink the broth warm with a little sea salt added with meals or use it cook rice or vegetables. I also use it anytime a recipe calls for stock or broth. So delicious healing to your gut!
