Nada’s Quinoa Salad
Ingredients
The Salad:
- 2 cups quinoa
- 4 cups water
- 3 cups diced tomatoes
- 2 cups black beans
- 10 green onions, diced
- 1/2 cup olive oil
- juice of 4 limes
- 4 teaspoons cumin
- 2 teaspoons salt
- 1 teaspoon red pepper
- 1/2 cup chopped cilantro
Total Time: 25 Minutes
Yields: 2 - 4 Servings
Directions
- Bring water to a boil, add quinoa and boil for 10-15 minutes
- Place cooked quinoa in a colander and run cold water over until cooled. Place aside
- Add tomatoes, black beans, and onions to the cooled quinoa
- Combine olive oil, lime juice, cumin, sea salt, red pepper, and cilantro in a separate bowl and pour over quinoa mixture
- Chill for one hour prior to serving

- To make straining easier I use a mesh strainer over a pitcher-style 4-cup measuring cup. This makes transferring the stock to the canning jars easier. I do one jar at a time, cleaning out the strainer as needed. the fat will rise tot he top of the jars in the fridge which can be included in whatever you are making or scraped off if your body is not ready for all the fat. Discard the bones and vegetables. Meat still on the bones can be eaten or reserved for soups.
- I love to drink the broth warm with a little sea salt added with meals or use it cook rice or vegetables. I also use it anytime a recipe calls for stock or broth. So delicious healing to your gut!
