Nada’s Quinoa Salad

Ingredients

The Salad:

  • 2 cups quinoa
  • 4 cups water
  • 3 cups diced tomatoes
  • 2 cups black beans
  • 10 green onions, diced
  • 1/2 cup olive oil
  • juice of 4 limes
  • 4 teaspoons cumin
  • 2 teaspoons salt
  • 1 teaspoon red pepper
  • 1/2 cup chopped cilantro

      Total Time: 25 Minutes

      Yields: 2 - 4 Servings

      Directions

      1. Bring water to a boil, add quinoa and boil for 10-15 minutes
      2. Place cooked quinoa in a colander and run cold water over until cooled. Place aside
      3. Add tomatoes, black beans, and onions to the cooled quinoa
      4. Combine olive oil, lime juice, cumin, sea salt, red pepper, and cilantro in a separate bowl and pour over quinoa mixture
      5. Chill for one hour prior to serving
