Lentil Detox Salad
Ingredients
The Salad:
- 2 red peppers diced
- 8 ounces of sprouted lentils cooked
- 1 bunch of cilantro chopped (about 3-4 cups)
- 2 tbsp of raisins or dried currants
- 1 avocado diced
Dressing:
- 1 tbsp of olive oil
- ¼ tsp sea salt
- fresh ground black pepper (to taste)
- 2 tsp of curry powder (or more if you like it spicy)
- 2 tsp of honey
- juice of one lime
Prep Time: 5 Minutes
Cook Time: 6 Minutes
Total Time: 11 Minutes
Yields: 2 - 4 Servings
Directions
- Mix together dressing in a large bowl, add together the other ingredients (except avocado) and mix well.
- Serve immediately or store in fridge up to 3 days.
- Top with avocado before serving.

- To make straining easier I use a mesh strainer over a pitcher-style 4-cup measuring cup. This makes transferring the stock to the canning jars easier. I do one jar at a time, cleaning out the strainer as needed. the fat will rise tot he top of the jars in the fridge which can be included in whatever you are making or scraped off if your body is not ready for all the fat. Discard the bones and vegetables. Meat still on the bones can be eaten or reserved for soups.
- I love to drink the broth warm with a little sea salt added with meals or use it cook rice or vegetables. I also use it anytime a recipe calls for stock or broth. So delicious healing to your gut!
