Greek Salad Dressing

The Dressing:

  • 1/2 cup olive oil
  • 2 TBSP red wine vinegar
  • small squirt dijon mustard
  • 1/2 tsp each of finely chopped fresh oregano and marjoram
  • salt and pepper to taste
  • 1 clove crushed garlic, finely minced
  • 1 tsp lemon juice

Yields: 6 oz

Directions

  1. Put all ingredients in small jar with lid and shake until well mixed or blend in a blender until smooth.

Notes

Autoimmune variation: omit the mustard and pepper and add an extra 1/2 tsp lemon juice.
