Ginger Pork and Cucumber Bowls

For the bowls

  • 1 TBSP olive oil
  • 1 lb ground pork (or ground turkey or chicken)
  • 1-inch piece fresh ginger, grated
  • 3 cloves garlic, sliced
  • 1 small yellow onion, diced
  • 1 tsp sea salt
  • 3 TBSP coconut aminos
  • 2 TBSP freshly squeezed lime juice
  • 1/4 cup cilantro, chopped (plus more for garnishing)
  • 2 TBSP fresh mint, chopped
  • 1 large cucumber, sliced

Directions

  • To a large skillet heat olive oil over medium heat and add ground pork, ginger, garlic and onion. Sauté 5 minutes until pork begins to brown.
  • Add coconut aminos and lime juice and stir to combine. Cook 5-7 minutes more until pork cooks through.
  • Add chopped cilantro and mint and cook 3-4 minutes further until herbs wilt.
  • Taste and adjust for salt as desired.
  • Slice cucumber and serve alongside ground pork on top cauliflower rice, cassava pasta or with roasted sweet potatoes. Garnish with additional cilantro, if desired.
