Date Night Chocolate Truffles
Ingredients
The Truffles:
- 1 cup Brazil nuts, (toasted @300 for ~30 min – let them get deeply toasted)
- 2 Tbsp almond butter (or peanut butter or sunflower butter – we used the latter on retreat)
- 1/2 tsp sea salt
- 3 tsp raw cacao powder (or cocoa powder but the flavor is much better with raw cacao)
- 9 dates
- 2 tsp vanilla
- Extra cacao or cocoa powder on a plate or wide-mouthed bowl (for rolling)
- Optional: 8 drops liquid stevia extract (likely a good choice for those with a sweet-loving palate)
Prep Time: 15 Minutes
Cook Time: 30 Minutes
Total Time: 45 Minutes
Yields: 12 Truffles
Directions
- Put Brazil nuts in food processor and grind until the texture resembles coarse meal.
- Add all remaining ingredients (except Stevia and rolling cacao) and process at least 30 seconds continuously until very well mixed and dough starts to come together.
- Taste and, if desired, add Stevia drops for sweetness. Pulse a few more times to blend.
- Form 1” balls in the palm of your hand and immediately roll in extra cacao or cocoa powder.
- Store in refrigerator, covered. Flavors will be best after a day or two of storage.

- To make straining easier I use a mesh strainer over a pitcher-style 4-cup measuring cup. This makes transferring the stock to the canning jars easier. I do one jar at a time, cleaning out the strainer as needed. the fat will rise tot he top of the jars in the fridge which can be included in whatever you are making or scraped off if your body is not ready for all the fat. Discard the bones and vegetables. Meat still on the bones can be eaten or reserved for soups.
- I love to drink the broth warm with a little sea salt added with meals or use it cook rice or vegetables. I also use it anytime a recipe calls for stock or broth. So delicious healing to your gut!
