Coconut Almond Energy Bites

The bites:

  • 2/3 cup creamy almond butter, slightly heated
  • 1 tablespoon coconut oil melted
  • 1/3 cup maple syrup
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup shredded unsweetened coconut
  • 1 cup gluten free old fashioned oats1
  • 12 whole almonds for garnish, optional

Total Time: 6 Minutes

Yields: 12 balls

Directions

  1. In a large bowl, mix together the heated nut butter and coconut oil until smooth. Add maple syrup, vanilla, cinnamon, coconut and oats and mix until well combined.
  2. Wet hands slightly and form dough tightly into 1″ – 1.5″ balls. If dough doesn’t stick together add 1/2 tablespoon water (or melted coconut oil) at a time until dough comes together or place dough in the fridge for 30 minutes prior to forming dough balls so it’s easier to handle.
  3. Garnish each energy bite by pressing one almond in the center, if desired.
  4. Store in airtight container in refrigerator or freezer until ready to enjoy.

Notes

If traveling, it’s best to keep these in a cooler if you can.

  1. To make straining easier I use a mesh strainer over a pitcher-style 4-cup measuring cup. This makes transferring the stock to the canning jars easier. I do one jar at a time, cleaning out the strainer as needed. the fat will rise tot he top of the jars in the fridge which can be included in whatever you are making or scraped off if your body is not ready for all the fat. Discard the bones and vegetables. Meat still on the bones can be eaten or reserved for soups.
  2. I love to drink the broth warm with a little sea salt added with meals or use it cook rice or vegetables. I also use it anytime a recipe calls for stock or broth. So delicious healing to your gut!
