Cilantro Lime Brown Rice
Ingredients
The Rice:
- 4 cups water
- 2 cups brown rice
- 1 lime, juiced
- 1 teaspoon minced garlic
- 1 teaspoon extra-virgin olive oil
- 1 teaspoon sea salt
- 1/2 cup chopped fresh cilantro
Prep Time: 10 Minutes
Cook Time: 40 Minutes
Total Time: 50 Minutes
Yields: 4 Servings
Directions
- Bring water and brown rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 30 to 45 minutes.
- Transfer brown rice to a large bowl and cool slightly, 5 to 7 minutes.
- Whisk lime juice, garlic, olive oil, and salt together in a bowl; stir into rice. Fold cilantro into rice mixture.

- To make straining easier I use a mesh strainer over a pitcher-style 4-cup measuring cup. This makes transferring the stock to the canning jars easier. I do one jar at a time, cleaning out the strainer as needed. the fat will rise tot he top of the jars in the fridge which can be included in whatever you are making or scraped off if your body is not ready for all the fat. Discard the bones and vegetables. Meat still on the bones can be eaten or reserved for soups.
- I love to drink the broth warm with a little sea salt added with meals or use it cook rice or vegetables. I also use it anytime a recipe calls for stock or broth. So delicious healing to your gut!
