Napa Cabbage, Carrot and Black Sesame Salad

The Salad:

  • 1/2 medium napa cabbage, very thinly sliced
  • 1 large carrot, grated
  • 1 tsp sea salt
  • Juice of 1/2 lemon
  • 1/4 cup black sesame seeds

Yields: 6 Servings

Directions

  1. Toss the cabbage and carrot in a bowl and rub salt into them.
  2. Place a clean paper towel over the vegetables and add another bowl on top of the towel to press the water out of the vegetables. Feel free to add additional dishes as weights. Press the vegetables for 30 minutes or longer.
  3. Once salad is pressed, rinse the salt off by filling the bowl with water and drain well.
  4. Add lemon juice and mix so that salad is evenly coated.
  5. Top with sesame seeds.
  1. To make straining easier I use a mesh strainer over a pitcher-style 4-cup measuring cup. This makes transferring the stock to the canning jars easier. I do one jar at a time, cleaning out the strainer as needed. the fat will rise tot he top of the jars in the fridge which can be included in whatever you are making or scraped off if your body is not ready for all the fat. Discard the bones and vegetables. Meat still on the bones can be eaten or reserved for soups.
  2. I love to drink the broth warm with a little sea salt added with meals or use it cook rice or vegetables. I also use it anytime a recipe calls for stock or broth. So delicious healing to your gut!
