Broccoli Cauliflower Salad

The Salad:

  • 10 slices bacon (uncured, no nitrates)
  • 1½ cups mayo (I use Primal Avocado Oil Mayo )
  • 1/3 cup monk fruit
  • 2 tablespoons apple cider vinegar
  • ¼ cup diced red onions
  • 1 bunch broccoli
  • 1 head cauliflower
  • 3 apples (I like Honey Crisp Apples)
  • ½ cup pecans

Servings: 10 Servings

Directions

  1. Cut bacon into small pieces. Cook until brown and crisp. Drain and set aside.
  2. Combine mayo, monk fruit, vinegar and onions. Set aside.
  3. Cut broccoli and cauliflower into small pieces. 
  4. Core and dice apples and mix into the dressing to coat to prevent them browning. Add to vegetables. 
  5. Add pecans and bacon pieces. 
  6. Add dressing and toss to cover. 
  7. Refrigerate until served.
