Asian Chicken Salad
Ingredients
The Salad:
- 2 cups shredded napa cabbage
- 2 scallions sliced with greens
- ½ cup chopped red pepper
- 4 cups shredded romaine lettuce
- 1 carrot, julienned
- ⅔ cup sliced almonds
- 1 ½ cups chopped or shredded chicken
The Dressing:
- ¼ cup vegannaise
- 3 teaspoon Thai peanut sauce
- 1 ½ tablespoons rice wine vinegar
- 2 tablespoons honey
- 1 teaspoon sesame oil

Directions
- Mix all dressing ingredients and set aside. Layer salad ingredients, toss and enjoy!
