Easy Pork Chops
Ingredients
The Pork Chops:
- 1 tbsp ghee or butter
- 2 pork chops
- 1 apple peeled, cored and sliced
- 2/3 cup apple juice or cider
- Fresh ground pepper
- 2 tbsps plain yogurt
Prep Time: 5 Minutes
Cook Time: 15 Minutes
Total Time: 20 Minutes
Yields: 2 Servings
Directions
- Heat half the ghee in a frying pan over medium-high heat.
- Add the apple slices and lightly sauté.
- Add pork chops, placing the apple slices around the edges.
- Cook the pork for about 1-2 minutes on each side until brown.
- Pour in apple juice, add fresh ground pepper to taste, and lower the heat.
- Cover and simmer until cooked, about 10 minutes.
- Stir in yogurt and bring back to simmer.
- Serve with apples, rice, and/or vegetables and use additional sauce for flavor.
- To make straining easier I use a mesh strainer over a pitcher-style 4-cup measuring cup. This makes transferring the stock to the canning jars easier. I do one jar at a time, cleaning out the strainer as needed. the fat will rise tot he top of the jars in the fridge which can be included in whatever you are making or scraped off if your body is not ready for all the fat. Discard the bones and vegetables. Meat still on the bones can be eaten or reserved for soups.
- I love to drink the broth warm with a little sea salt added with meals or use it cook rice or vegetables. I also use it anytime a recipe calls for stock or broth. So delicious healing to your gut!
