Easy Crock Pot Roast

The Roast:

  • 3 lb. chuck roast
  • 1/2 can beef broth (1 cup)
  • 1 cup flour
  • 1/2 tsp garlic powder
  • 1 or 2 cloves garlic
  • 1 medium onion, diced
  • 2 tbsp olive oil
  • 1 bay leaf
  • dash of pepper
  • 3 carrots
  • 3 potatoes cubed
  • 1 celery stalk
  • 1 tsp salt
  • 1 tsp rosemary
  • 1/2 cup red wine
Easy crock pot roast with tender beef, carrots, potatoes, and celery cooked in a rich broth, garnished with rosemary.

Yields: 6-8 Servings

Directions

  1. Wash chuck roast. Season generously with salt, pepper, rosemary, and garlic powder. Coat with flour.
  2. Place floured roast into oiled skillet and brown lightly on all sides.
  3. While browning, add diced onions to skillet.
  4. Transfer roast and onions to greased crock pot. Toss in whole garlic cloves, bay leaf, potatoes, carrots, and celery.
  5. Pour in beef broth and red wine and add salt and pepper.
  6. Cover and cook on low for 8 to 10 hours.
