Beef With Gravy
Ingredients
The Beef and Gravy:
- 1/2 teaspoon salt
- 4 t. extra virgin olive oil divided
- 4 cloves garlic minced
- 1/2 cup strong brewed coffee
- 1 4-pound beef roast (chuck roast/arm or shoulder) lean and trimmed of fat
- 2 tablespoons organic cornstarch mixed with 2 tablespoons cold water
- freshly ground pepper
- 2 large onions thinly sliced
- 1 t. dried thyme or 2 t. of fresh thyme
- 2 T balsamic vinegar
Prep Time: 30 Minutes
Cook Time: 5 Hours
Total Time: 5 Hrs 30 Minutes
Yields: 6-8 Servings
Directions
- Season beef with salt and pepper
- Heat 2 teaspoons oil in a pot over medium-high heat
- Add beef and cook until well browned on all sides. Let the meat rest after cooking for 5-7 minutes–this will add flavor
- Transfer to crockpot and add the remaining 2 teaspoons of oil to the pot. Add onions and cook for 5-7 minutes
- Add garlic and thyme and cook for an additional minute
- Stir in coffee and vinegar; bring to a simmer
- Pour over roast in the crock pot, cook for 4 1/2-5 hours on high or 7-8 hours on low
- When the beef is done cooking take out the liquid and add the cornstarch mixture and bring to a boil, whisking constantly until the gravy thickens. Season with pepper
- Carve and serve with gravy
