Cranberry Sauce

Ingredients

The Sauce:

  • 3 apples, peeled, cored and chopped
  • 3 pears, peeled, cored and chopped
  • 2 packages of frozen or fresh cranberries (12 oz)
  • Splash of orange juice (1-2 oz)
  • 1/2-1 Tablespoon maple syrup (or honey on SCD/GAPS)

Prep Time: 10 Minutes

Cook Time: 25 Minutes

Total Time: 35 Minutes

Yields: 3-4 Cups

Directions

  1. Place apples, pears, cranberries, and orange juice in a pot. 
  2. Turn heat to low and simmer for 25 minutes. 
  3. Once cranberries have popped and sauce is cooked down, add maple syrup to taste. 
  4. My preference is a sweet-sour blend, not too sweet, just enough maple to take away the strong tart flavor—the amount of sweetener will depend on the type of apples you use, and how you like it.

Notes

For LOD, use all apples instead of half pears.

  1. To make straining easier I use a mesh strainer over a pitcher-style 4-cup measuring cup. This makes transferring the stock to the canning jars easier. I do one jar at a time, cleaning out the strainer as needed. the fat will rise tot he top of the jars in the fridge which can be included in whatever you are making or scraped off if your body is not ready for all the fat. Discard the bones and vegetables. Meat still on the bones can be eaten or reserved for soups.
  2. I love to drink the broth warm with a little sea salt added with meals or use it cook rice or vegetables. I also use it anytime a recipe calls for stock or broth. So delicious healing to your gut!
