Date Night Chocolate Truffles

Ingredients

The Truffles:

  • 1 cup Brazil nuts, (toasted @300 for ~30 min – let them get deeply toasted)
  • 2 Tbsp almond butter (or peanut butter or sunflower butter – we used the latter on retreat)
  • 1/2 tsp sea salt
  • 3 tsp raw cacao powder (or cocoa powder but the flavor is much better with raw cacao)
  • 9 dates
  • 2 tsp vanilla
  • Extra cacao or cocoa powder on a plate or wide-mouthed bowl (for rolling)
  • Optional: 8 drops liquid stevia extract (likely a good choice for those with a sweet-loving palate)

Prep Time: 15 Minutes

Cook Time: 30 Minutes

Total Time: 45 Minutes

Yields: 12 Truffles

Directions

  1. Put Brazil nuts in food processor and grind until the texture resembles coarse meal. 
  2. Add all remaining ingredients (except Stevia and rolling cacao) and process at least 30 seconds continuously until very well mixed and dough starts to come together. 
  3. Taste and, if desired, add Stevia drops for sweetness. Pulse a few more times to blend. 
  4. Form 1” balls in the palm of your hand and immediately roll in extra cacao or cocoa powder. 
  5. Store in refrigerator, covered. Flavors will be best after a day or two of storage.
