The Best Organic Pesto

Ingredients

The pesto:

  • 2 cups fresh basil leaves, packed
  • 1/4 cup shredded Parmesan
  • 1/2 cup olive oil
  • 3 tbsp raw walnuts or pine nuts
  • 3 cloves of garlic, minced

Yields: 1 Cup

Directions

  1. Place all ingredients in food processor and blend until well blended.

Notes

Eat Pesto on:

  • Pasta
  • Spaghetti Squash
  • Scrambled eggs
  • Sandwiches
  • Pizza/flatbread
  • Mix with butter for pesto butter
  • Mix with mayo for sandwich spread
  • Spread pesto butter on grilled corn or roasted sweet potatoes
  • Toss pesto with green beans, potatoes, white beans, peas, or tuna
  • Add to chicken salad
  • Add to hummus 
  • Spread on Salmon when it comes off the grill

Pesto Freezes Well! When thawing–never heat it just let it come to room temperature
