Happy Hour Mocktail Apertif
Ingredients
The casserole:
- 1 1/2 cups sparkling mineral water or seltzer (I prefer Pellegrino – ideally ice cold!)
- 1 to 1 1/2 Tbsp apple cider vinegar (I recommend Bragg’s)
- 15 drops liquid stevia sweetener (I recommend Stevita)
- 5 drops lemon essential oil
- 2 drops ginger essential oil
- Ice

Directions
- Mix in a ice-cold cocktail shaker and give just a few quick shakes (more and it will get too fizzy) or prepare in a pitcher for a crowd (quadruple the recipe) and blend aggressively with a whisk. Feel free to reduce or increase the oil drops to suit your tastes.
- Garnish with a citrus slice, if you like. Have fun with it! Use a sexy glass. Serve with an umbrella

- To make straining easier I use a mesh strainer over a pitcher-style 4-cup measuring cup. This makes transferring the stock to the canning jars easier. I do one jar at a time, cleaning out the strainer as needed. the fat will rise tot he top of the jars in the fridge which can be included in whatever you are making or scraped off if your body is not ready for all the fat. Discard the bones and vegetables. Meat still on the bones can be eaten or reserved for soups.
- I love to drink the broth warm with a little sea salt added with meals or use it cook rice or vegetables. I also use it anytime a recipe calls for stock or broth. So delicious healing to your gut!
